Beef Fajita Bowl

Ingredients:

2 c Cauliflower Rice 
2 c frozen peppers & onions mix
4 oz ground beef
1 T Taco Seasoning
1/4 c plain greek yogurt
2 T salsa

Directions:

  1. Heat skillet over med-high heat
  2. Cook ground beef until browned
  3. Add taco seasoning and stir
  4. Add peppers and onions
  5. Put lid on skillet and cook until hot
  6. Add cauliflower rice and heat until hot
  7. Pour off any excess liquid
  8. Move mixture to serving bowl
  9. In small bowl, combine yogurt and salsa
  10. Spoon salsa yogurt onto Fajita bowl
