Chocolate Chip Peanut Butter Protein Balls

Ingredients:

Balls:
6 T. peanut flour
1/4 c. plain kefir
2 dropperfuls stevia
2 pinches pink salt
1 scoop pea protein powder
3 T. almond milk
1 T. cacao nibs

Coating:
1 T. coconut oil, melted
1 T. unsweetened cocoa powder
stevia, to taste

Directions:

  1. Line baking sheet with wax paper or parchment paper.
  2. Combine peanut flour, stevia, and kefir to form peanut butter.
  3. Add protein powder and almond milk and continue to stir until dough-like mixture forms.
  4. Fold in cacao nibs.
  5. Roll into balls, about 1 tablespoon each, and place on baking sheet.
  6. Combine coating mixture in small bowl.
  7. Roll one ball in coating mixture then place back on baking sheet. 
  8. Repeat with each ball then place baking sheet into fridge or freezer for a few minutes until coating has hardened.
  9. Continue Step #7 and #8 until all coating mixture is gone.
  10. Store balls, covered, in fridge (May also be stored in freezer and allowed to defrost 5-10 minutes before eating).
