Cinnamon Meringue Puffs

Ingredients:

1 c. egg whites
1/2 tsp. cinnamon
6 packets stevia
1/8 tsp. xanthan gum, optional

Directions:

  1. Preheat oven to 350 degrees and line baking sheet with parchment paper
  2. Pour egg whites into bowl and mix with hand mixer until eggs for stiff peaks (Be patient with this b/c it’s the most important step!)
  3. Gently stir in cinnamon, stevia, and xanthan gum (if desired, to help puffs keep their shape when baking)
  4. Spoon by the tablespoon onto baking sheet
  5. Bake for 12 minutes, or until golden on top
  6. Sprinkle with additional cinnamon, if desired
