Ingredients:
3.5 oz scallops (or shrimp)
6 cloves garlic, crushed
24 oz whole peeled tomatoes with liquid, chopped
1/4-1/2 t pink salt
1 t crushed red pepper flakes
1 T chopped fresh parsley
Directions:
- Saute garlic over medium heat in a nonstick skillet
- When garlic starts to sizzle, pour in tomatoes
- Season with salt and red pepper
- Bring to a boil
- Lower heat and simmer for 30 mins, stirring occasionally
- Cook scallops (or shrimp) in nonstick pan for 2 minutes, stirring frequently, or until shrimp turn pink
- Add shrimp to tomato mixture and stir in parsley
- Cook for 3-4 minutes or until the sauce just begins to bubble
