Fra Diavolo Sauce with Scallops (or Shrimp)

Ingredients:

3.5 oz scallops (or shrimp)
6 cloves garlic, crushed
24 oz whole peeled tomatoes with liquid, chopped
1/4-1/2 t pink salt
1 t crushed red pepper flakes
1 T chopped fresh parsley

Directions:

  1. Saute garlic over medium heat in a nonstick skillet
  2. When garlic starts to sizzle, pour in tomatoes
  3. Season with salt and red pepper
  4. Bring to a boil
  5. Lower heat and simmer for 30 mins, stirring occasionally
  6. Cook scallops (or shrimp) in nonstick pan for 2 minutes, stirring frequently, or until shrimp turn pink
  7. Add shrimp to tomato mixture and stir in parsley
  8. Cook for 3-4 minutes or until the sauce just begins to bubble
