French Toast Scrambled Eggs

Calories Per Serving: 125 P2 version (230 P4 version)

Ingredients:

P2 version:
1 egg
1/2 c egg whites (3 egg whites)
1/4 t cinnamon
10 drops SweetLeaf vanilla creme stevia (more or less, to taste)

P4 version:
3 eggs
1/4 t cinnamon
10 drops SweetLeaf vanilla creme stevia (more or less, to taste)
1 t coconut oil

Directions:

  1. Heat small amount of water in skillet over medium-high heat (Heat coconut oil for P4 version)
  2. Combine egg, egg whites (if using), and stevia in small bowl then whisk well
  3. Add eggs to skillet and cook until fluffy and cooked
  4. Transfer to plate
  5. Sprinkle with cinnamon (and additional stevia, if desired)
