Grain-Free Pancakes

Ingredients:

1 egg 
1/2 c egg whites
1 T coconut flour
1/4 c golden flax meal
1/2 t baking powder
stevia, to taste

Directions:

  1. Combine all ingredients together with fork, whisk, or in Magic Bullet
  2. Heat large skillet over med-high heat
  3. Grease skillet
  4. Pour batter into 4″ circles into skillet
  5. Wait until bubbles form in pancakes
  6. Flip and cook another minute
  7. Repeat with remaining batter
