Ingredients: 

1/4 c. cottage cheese
1 egg
2 T. coconut flour
2 T. unflavored whey protein powder
1/4 tsp. baking powder
1/16 tsp. pink salt

Directions: 
  1. Grease ramekin or small bowl.
  2. Blend together cottage cheese and egg.
  3. Pulse or stir in all other ingredients.
  4. Scoop batter into ramekin and tap on counter a few times to distribute evenly.
  5. Microwave for 2-3 minutes.
  6. Slice in half then toast each slice.
