1/2 lb. lean ground beef
1/2 red onion, coarsely chopped
1 green pepper, coarsely chopped
6 jalapeno pepper slices, finely chopped
4 c. riced cauliflower
1 tsp. chili powder
1/2 tsp. paprika
1/2 tsp. garlic powder
1 tsp. cumin
1/2 c. salsa

  1. Cook beef in skillet over medium-high heat until beginning to brown.
  2. Stir in peppers, onion, and cauliflower then cover with lid and cook, stirring occasionally, until veggies begin to soften.
  3. Stir in spices and salsa and cook for another couple minutes. 
  4. Portion into 2 bowls.

*Excellent topped with sour cream/plain greek yogurt and guacamole
