1/2 lb. lean ground beef
1/2 red onion, coarsely chopped
1 green pepper, coarsely chopped
6 jalapeno pepper slices, finely chopped
4 c. riced cauliflower
1 tsp. chili powder
1/2 tsp. paprika
1/2 tsp. garlic powder
1 tsp. cumin
1/2 c. salsa
- Cook beef in skillet over medium-high heat until beginning to brown.
- Stir in peppers, onion, and cauliflower then cover with lid and cook, stirring occasionally, until veggies begin to soften.
- Stir in spices and salsa and cook for another couple minutes.
- Portion into 2 bowls.
*Excellent topped with sour cream/plain greek yogurt and guacamole
