Sesame Garlic Cauliflower

Ingredients:

1 small head cauliflower, chopped 
1/3 c. liquid aminos
1/4 c. water
1/4 c. date paste
1/4 c. rice vinegar
1 T. minced garlic
1 1/2 tsp. toasted sesame oil
1/2 tsp. ginger
1/2 tsp. xanthan gum
1 tsp. sesame seeds
scallions (optional) for garnish

Directions:

  1. Preheat oven to 450 degrees. 
  2. Line baking sheet with parchment paper.
  3. Cut cauliflower into florets then place in single layer on baking sheet.
  4. Bake 10 minutes.
  5. Whisk together aminos, water, date paste, vinegar, garlic, sesame oil, and ginger in saucepan until beginning to boil.
  6. Whisk in xanthan gum then lower heat and cook 2 minutes.
  7. Flip cauliflower and bake 8 additional minutes.
  8. Pour sauce over cauliflower then bake another 3 minutes. 
  9. Remove from oven then top with sesame seeds and scallions.
