Zucchini Coconut Flour Pizza Crust

Ingredients: 

1 medium zucchini, finely shredded (about 2 cups)
1 egg
1/3 c egg whites
2 T coconut flour
1/2 t baking powder
1/2-1 t italian seasoning
1/8 t garlic powder
1/8 t pink salt
 

Directions: 
  1. Preheat oven to 450 degrees
  2. Line baking sheet or pizza pan/stone with parchment paper
  3. Steam zucchini on stovetop for a 2-3 minutes or microwave for 1 minute
  4. Wring as much moisture as possible out of zucchini with tea towel
  5. In medium bowl, whisk together egg, egg whites, baking powder, and spices
  6. Stir in zucchini and coconut flour
  7. Spoon mixture onto baking sheet and flatten evenly into circle or rectangle about 1/4 inch thick
  8. Bake about 10-12 minutes, until starting to brown
  9. Remove from oven to add sauce, cheese, and desired toppings then baking another few minutes until cheese is melted
