My lunch today was a creation I'm calling Sweet Apple Tuna over Onions and, yes, you ARE reading that correctly! I didn't have any form of protein defrosted when I got home and really didn't want to spend a long time waiting for something to thaw, so I grabbed a can of tuna out of the pantry and got creative. I wasn't in the mood for cold tuna, so I threw the tuna into a skillet and went to the fridge to see what I could come up.
One of the things that people assume comes hand-in-hand with weight loss is boring, bland food. That absolutely does not have to be the case when you are trying to eat healthy!
It's FINALLY starting to warm up here in State College...we actually hit 50 degrees yesterday! A lot of the snow has melted over the past few days and we just have some small icy patches that will hopefully melt away with the rain we have showing up in the forecast. I don't know about you all, but I'm ready for Spring to spring any time now!
After finishing dinner the other night, my sweet tooth kicked in, so I ended up creating this Strawberry Cake with Vanilla Creme Frosting.
We've all heard the saying, "You can't have your cake and eat it too". Well, all that ever makes me want to do is go eat a big piece of cake. I have a couple big issues with cake normally though: 1. Cake really isn't very good for you at all. 2. It takes a long time in the kitchen (and a lot of ingredients) to get to the end result of cake sitting on the plate in front of me.
I'm not sure where you all are tuning in from today to read this, but here in Central PA it is coooooooooold! We're talking a brisk and chilly 18 degrees (and believe it or not, that's actually warmer than what it has been this entire past week). So, since we've been chilled to the bone lately, I figured it was time for some soup to warm us up!
I had a bunch of cabbage in the fridge that was going to be going bad soon, so that is how the recipe for this Chicken Cabbage Soup came to be created.
