My lunch today was a creation I’m calling Sweet Apple Tuna over Onions and, yes, you ARE reading that correctly! I didn’t have any form of protein defrosted when I got home and really didn’t want to spend a long time waiting for something to thaw, so I grabbed a can of tuna out of the pantry and got creative. I wasn’t in the mood for cold tuna, so I threw the tuna into a skillet and went to the fridge to see what I could come up.
When I was growing up, my parents always ate Peanut Butter, Tomato & Mayonnaise Sandwiches in the summer when we had tomatoes fresh from the garden. I remember how I always made a face and gagged when I saw them eating it because it just seems like such a strange combo of flavors to put together. One summer, years later, I actually worked up the courage to try a bite of the ridiculous sandwich and come to find that it was actually delicious. From that day on, I’ve tried to experiment with ingredients that may not always be the obvious choice to put together.
So, when, I opened the fridge door and saw a red onion and apple, I grabbed them and started chopping. I just kept adding a little bit of this and that spicewise as I went a long and came up with this yummy dish. If you’re feeling brave, give it a try!!
