It’s FINALLY starting to warm up here in State College…we actually hit 50 degrees yesterday! A lot of the snow has melted over the past few days and we just have some small icy patches that will hopefully melt away with the rain we have showing up in the forecast. I don’t know about you all, but I’m ready for Spring to spring any time now!

Since it was significantly above freezing outside today, we decided to make Lemon Ice as an after dinner treat. You are allowed to have the juice of one lemon or lime per day in Phase 2 (along with still having your two fruits for the day), so it’s an excellent option for when you feel the need for something sweet or when you’ve use a protein, veggie, and a tomato your fruit for a meal. It is light, tasty, and really refreshing without packing in a bunch of calories.

As I enjoyed my lemony iced deliciousness, I closed by eyes and envisionsed I was sitting with a book by the pool on a sunny 85 degree day….hey, a girl can dream, right?!
