After finishing dinner the other night, my sweet tooth kicked in, so I ended up creating this Strawberry Cake with Vanilla Creme Frosting.
We’ve all heard the saying, “You can’t have your cake and eat it too”. Well, all that ever makes me want to do is go eat a big piece of cake. I have a couple big issues with cake normally though: 1. Cake really isn’t very good for you at all. 2. It takes a long time in the kitchen (and a lot of ingredients) to get to the end result of cake sitting on the plate in front of me.
Awhile back, I found out the you can make something called a Mug Cake and it could be ready to eat in less than 5 minutes!!! Unfortunately, however, the recipe I found was still loaded with sugars and starches. So I did a little digging and found out that you can, indeed, make a Healthy Mug Cake.
The best part of discovering a recipe like this one is that I no longer have to feel any guilt in wanting a piece of cake. In fact, there have been some mornings where my son and I will split a piece of this yummy cake topped with our version of Healthy Ice Cream for breakfast….seems like such a sin, but totally isn’t!!
