90 Second Coconut Bread

1 egg
1 t coconut flour
1/2 t baking powder
1 T coconut oil (or butter), melted
spices and stevia, if desired


  1. Mix coconut flour, egg, and baking powder together in microwavable container
  2. Stir in coconut oil (or butter) and spices, if desired, until well combined
  3. Microwave for 90 seconds
  4. Cool for a minute
  5. Slice in half
  6. Toast in toaster or lightly brown each side in skillet over med-high heat
