Ingredients:
4 eggs
1/2 c canned pumpkin puree
2 t stevia extract (more or less, to taste)
2 t vanilla extract
3 large (or 4 small), very ripe bananas
1/8 t pink salt
1 t cinnamon
1 t pumpkin pie spice
1 bag (1.2 oz) Trader Joe’s freeze-dried Fuji apple slices, crushed (or 2 Fuji apples, chopped)
Directions:
- Preheat oven to 350 degrees
- Grease 9″ cake pan
- Place all ingredients, except apples, into blender or food processor
- Process until smooth
- Stir in apples
- Pour into cake pan
- Bake for 55-60 minutes, until toothpick inserted in center comes out clean
- Allow cake to cool completely in pan before removing
- Slice and serve once cooled
- Can be stored, loosely covered, at room temperature for up to 3 days
