Ingredients

1 apple
3 oz cooked chicken breast
4 oz purple cabbage
4 oz green cabbage
2 T Simple Girl Sweet Vinaigrette Dressing
1 1/2 T dijon mustard, divided
1/2 T lemon juice
1/4 t basil 
2 mint leaves, finely chopped
6 drops stevia
1 T apple cider vinegar
1/4 t celery seed

Directions
  1. In medium bowl, mix together 1 T dijon, apple cider vinegar, celery seed, lemon juice, and dressing
  2. Flip apple upside down and cut straight down on both sides of core then set pieces aside
  3. Cut off other 2 remaining slices of apple and chop into bite sized piece then add to bowl
  4. Chop/slice cabbage and add to bowl
  5. Stir until well coated then place in fridge to marinate
  6. Cut the 2 large apple slices into slices of equal thickness to make "buns"
  7. Slice chicken in half and place on 2 apple slices
  8. Mix 1/2 T dijon, basil, stevia, and mint together then spread on chicken
  9. Top with remaining apple slices
