Ingredients:
1 can (full fat) coconut milk
½ c riced cauliflower (chopped fine in food processor)
½ c shredded, unsweetened coconut
2 c apple, grated or finely chopped
1 t vanilla extract
½ t cinnamon
stevia, to taste
Directions:
- Mix coconut milk, cauliflower, apple, vanilla, and cinnamon in saucepan over med-high heat
- Reduce heat, cover, and simmer for 15-20 minutes
- Serve warm or refrigerate and serve cold
