Ingredients:
1/2 c coconut flour
1/2 t baking powder
1/4 t pink salt
4 eggs
1 t vanilla stevia
1/3 c coconut oil, warmed until melted
2 T unsweetened almond milk
2 t vanilla extract
1 c coconut cream (can refrigerated overnight)
1 oz cream cheese (softened)
3 T unsweetened cocoa powder
stevia, to taste
Directions:
- Preheat oven to 350 degrees
- Grease small round cake pan
- In a large bowl, whisk coconut flour, baking powder, and salt until blended
- Whisk in eggs, stevia, coconut oil, almond milk, and vanilla until completely smooth
- Pour batter into cake pan
- Bake 35 minutes or until golden and a toothpick inserted in the center comes out clean
- Whip coconut cream with hand mixer in small bowl until stiff peaks are formed
- Whip in cream cheese
- Stir in stevia and cocoa powder
- Place frosting in fridge until ready to put on cake
- Transfer cake pan to wire rack and cool completely before frosting
