Ingredients:
3 oz lean ground beef
1/4 c chopped red onion
1/3 c chopped green pepper
3 eggs
3 T blue cheese crumbles
1/2 T coconut oil
pink salt, to taste
Directions:
- Brown meat in skillet with peppers and onions over med-high heat
- Drain and cover to keep warm
- Melt coconut oil in separate skillet
- Whisk eggs then pour into skillet
- Cover with lid and cook until bubbly
- Pour meat mixture onto eggs
- Sprinkle on blue cheese crumbles evenly
- Fold in half with spatula
- Place lid on skillet and cook a little longer
- Transfer to plate
