Boil & Roast Carnitas

Ingredients:

1 pork butt (5 bs)
3 carrots, chopped
3 onions, chopped
2 bunches cilantro (1 bunch whole, 1 bunch chopped)
6 cloves garlic
1 t coriander 
1 t oregano
1/2 t chili powder
1/2 t cumin
6-8 c water
1 1/2 c green chile salsa
1 c roasted, diced green chiles
1/2 c green onion, sliced thin (including tops)

Directions:

  1. In large pot, add pork, carrots, onions, garlic, cumin, coriander, oregano, chili powder, and whole cilantro
  2. Add enough water to cover and bring to a boil
  3. Reduce heat, cover, and simmer until tender (about 3.5 hours)
  4. Remove roast from broth once tender
  5. Place in baking pan, fat side up, and bake at 350 degrees until well-browned, about 1 hour
  6. Drain off fat and shread meat, disregarding fat and bones
  7. Stir in salsa, green chilis, green onions, and chopped cilantro
  8. Bake another 15-20 minutes, until hot

(Great served with Cauliflower Tortillas)
