Buffalo Chicken Quinoa Salad

½ c quinoa
1 c water
1 (12.5 oz) can chicken breast in water (or 1.5 c cooked chicken breast)
1 c chopped celery
1 c shredded carrots
1 c shredded cabbage (red or green)
¼ c goat cheese crumbles
½ c hot sauce
2 T olive oil


  1. Place quinoa and water in small saucepan and bring to boil
  2. Cover with lid and reduce to simmer for 15 minutes
  3. Combine chicken, celery, carrots, cabbage, and goat cheese in bowl
  4. Combine hot sauce and olive oil together then pour over bowl
  5. Fluff quinoa with fork after cooked then stir into bowl
  6. Serve warm or cold
