Ingredients:
½ c quinoa
1 c water
1 (12.5 oz) can chicken breast in water (or 1.5 c cooked chicken breast)
1 c chopped celery
1 c shredded carrots
1 c shredded cabbage (red or green)
¼ c goat cheese crumbles
½ c hot sauce
2 T olive oil
Directions:
- Place quinoa and water in small saucepan and bring to boil
- Cover with lid and reduce to simmer for 15 minutes
- Combine chicken, celery, carrots, cabbage, and goat cheese in bowl
- Combine hot sauce and olive oil together then pour over bowl
- Fluff quinoa with fork after cooked then stir into bowl
- Serve warm or cold
