Cacao Nib Coconut Delites

Ingredients:

2 ripe bananas, mashed 
1/2 c unsweetened shredded coconut
2 T coconut flour
1/4 c raw cacao nibs
1 T unsweetened cocoa powder

Directions:

  1. Preheat oven to 350
  2. Line baking sheet with parchment paper
  3. In medium bowl, mix the mashed banana and shredded coconut flakes until combined
  4. Stir in cocoa powder 
  5. Add coconut flour until combined
  6. Stir in cacao nibs until combined
  7. Drop 12 (~1 T) scoops onto the baking sheet and gently press down in the center
  8. Bake 25 minutes
  9. Remove from oven and allow to cool
  10. Store in fridge or freeze and save for later date
