Cajun Coconut Shrimp

1.5 t cajun seasoning
1/8 t pink salt
1/8 t pepper
1 t sesame oil
1 egg
3 T unsweetened shredded coconut
7 oz raw tail-on shrimp


  1. Preheat air fryer to 180 degrees C or oven to 350 degrees F
  2. In a small bowl, whisk egg, cajun seasoning, oil, salt and pepper
  3. Place shredded coconut in separate small bowl
  4. Dip shrimp into egg mixture, then press one shrimp at a time in the shredded coconut until well coated
  5. Place shrimp on parchment lined baking sheet or in parchment lined air fryer basket
  6. Cook shrimp for 10 minutes, then flip and bake for another 5 minutes until slightly browned

    *Excellent served with Curry Lime Dipping Sauce
