Cashew Cream Cheese

Servings: 8 (2T/serving)

Ingredients:

1 c raw cashews (soaked for 1hr or more)
¼ c filtered water
¼ c nutritional yeast
2 T lemon juice
2 cloves garlic
1 T apple cider vinegar
1 T dijon mustard
pink salt and pepper, to taste
additional flavor options: tomato paste, herbs, sundried tomatoes, olives, etc

Directions:

  1. Add all ingredients high speed blender
  2. Blend until thick and creamy
  3. Add additional flavor options, if desired 
  4. Store in refrigerator 5-7 days (will further harden after it’s been chilled)
