Ingredients:
1 medium head cauliflower, cut into bite sized pieces
6 hard boiled eggs
1/3 c plain Greek yogurt
3 T dijon mustard
1/4 c finely chopped/diced cucumber
1 T apple cider vinegar
2 T chopped onion
pink salt and pepper, to taste
2 green onions, chopped
1 t dill
Directions:
- Steam cauliflower until tender
- Separate egg yolks from whites and place in bowl then mash
- Cut egg whites into bite sized pieces then stir into yolks
- Stir in yogurt, mustard, acv, onion, cucumber, pink salt, pepper, and dill
- Scoop mixture into cauliflower and stir until well coated
- Garnish with green onions
