Cauliflower Salad

1 medium head cauliflower, cut into bite sized pieces
6 hard boiled eggs
1/3 c plain Greek yogurt
3 T dijon mustard
1/4 c finely chopped/diced cucumber
1 T apple cider vinegar
2 T chopped onion
pink salt and pepper, to taste
2 green onions, chopped
1 t dill


  1. Steam cauliflower until tender
  2. Separate egg yolks from whites and place in bowl then mash
  3. Cut egg whites into bite sized pieces then stir into yolks
  4. Stir in yogurt, mustard, acv, onion, cucumber, pink salt, pepper, and dill
  5. Scoop mixture into cauliflower and stir until well coated
  6. Garnish with green onions
