Cheeseburger Scalloped No-tatoes

8 oz lean ground beef
1/4 c onion, minced
16 oz bag radishes
1 T coconut oil
1 c unsweetened almond milk
1 T coconut flour
6 T nutritional yeast
2 t dijon mustard
1/4 t garlic powder
1/4 t onion powder
1/4 -1/2 t pink salt
pepper, to taste


  1. Slice radishes thin, size of scalloped potato slices
  2. Place in NuWave oven on foil and cook for 10-15 minutes (or bake at 350 for 15-20 minutes)
  3. Brown beef and onions in skillet over med-high heat
  4. Melt coconut oil in small saucepan
  5. Whisk almond milk and coconut flour together then stir into coconut oil
  6. Stir in nutritional yeast then bring to a simmer
  7. Stir in dijon mustard, garlic powder, onion powder, pink salt, and pepper
  8. Simmer for 5 minutes
  9. Remove radishes from oven and stir into beef and onions
  10. Pour sauce into skillet and cook down until non-soupy consistency is reached
