Cheesesteak Stuffed Peppers

Ingredients:

1 lb thinly sliced sirloin steak (or roast beef)
8 slices provolone cheese
4 large bell peppers
1 medium sweet onion
1 lb mushrooms
3 T butter
3 T olive oil 
pink salt and pepper, to taste

Directions:

  1. Preheat oven to 400 degrees
  2. Prebake peppers on parchment line baking sheet for 10 minutes
  3. Slice pepperin half lengthwise, remove ribs and seeds
  4. Slice onions and mushrooms
  5. Saute over medium heat with butter, olive oil, and a little salt and pepper in skillet until caramelized
  6. Salt and pepper steak and saute in separate skillet for about 5 minutes
  7. Add steak to the onion/mushroom mixture and stir to combine
  8. Line inside of each pepper with a slice of provolone cheese
  9. Fill each pepper with meat mixture until overflowing
  10. Top each pepper with another slice of provolone cheese
  11. Bake for 15-20 minutes until the cheese on top is golden brown
