"Cheesy" Mashed Cauliflower

Ingredients:

1 large head cauliflower, chopped
2 t minced garlic
1/4 c nutritional yeast
2 T ghee
1/2 t salt
1 T parsley

Directions:

  1. Steam cauliflower and garlic for 7 to 10 minutes, until cauliflower is easily pierced by a fork
  2. Drain and transfer to bowl of food processor
  3. Add in nutritional yeast, ghee, salt and parsley
  4. Process until desired consistency is reached
