Chewy Chocolate Oatmeal Bars

1/4 c almond butter (or other nut/seed butter of choice)
1/2 c dates
3/4 c unsweetened almond milk
1 t vanilla
1/2 c egg white protein powder (or other protein powder of choice)
1/4 c unsweetened cocoa powder
1/8 t pink salt
1 3/4 c oats
1/3 c Lily’s chocolate chips (or cacao nibs or coconut oil chocolate chips)


  1. Preheat oven to 350 degree
  2. Line 8×8 baking dish with parchment paper or foil
  3. Combine almond butter, dates, almond milk, and vanilla in food processor or blender until smooth and well-combined
  4. Mix in protein powder, cocoa powder, and pink salt until fully incorporated.
  5. Add oats and pulse until just combined
  6. Stir in chocolate chips
  7. Spoon into baking dish and spread the mixture evenly with hands or spatula
  8. Bake 15 minutes, until edges and top have set
  9. Remove from oven and allow to cool
  10. Cut into 12 bars
