Ingredients:
1/4 c almond butter (or other nut/seed butter of choice)
1/2 c dates
3/4 c unsweetened almond milk
1 t vanilla
1/2 c egg white protein powder (or other protein powder of choice)
1/4 c unsweetened cocoa powder
1/8 t pink salt
1 3/4 c oats
1/3 c Lily’s chocolate chips (or cacao nibs or coconut oil chocolate chips)
Directions:
- Preheat oven to 350 degree
- Line 8×8 baking dish with parchment paper or foil
- Combine almond butter, dates, almond milk, and vanilla in food processor or blender until smooth and well-combined
- Mix in protein powder, cocoa powder, and pink salt until fully incorporated.
- Add oats and pulse until just combined
- Stir in chocolate chips
- Spoon into baking dish and spread the mixture evenly with hands or spatula
- Bake 15 minutes, until edges and top have set
- Remove from oven and allow to cool
- Cut into 12 bars
