Chicken Zucchini Poppers

1 lb ground chicken breast
16 oz grated zucchini (leave peel on)
2 t onion powder
3-4 T cilantro or parsley minced
1 clove garlic, minced
1 t pink salt
½ t pepper
(optional: ¾ t cumin)


  1. Preheat oven to 400 degrees
  2. Line baking sheet with parchment paper
  3. Toss chicken with zucchini, onion powder, cilantro/parsley, garlic, salt, and pepper (and cumin, if using)
  4. Scoop mixture out by the spoonful and form meatballs onto lined pan, flatten slightly if desired
  5. Bake 20-25 minutes, or until cooked through
  6. If desired, place under the broiler for an additional 2-3 minutes or until browned on top
