Chickpea Pizza Crust

1 1/2 c shredded mozzarella cheese
1 1/2 c almond flour
1/4 c garbanzo bean (chickpea) flour
1/4 c flax meal
1 t onion powder
1/2 t garlic powder
1/2 t pink salt
2 eggs
1/4 c olive oil
1/2 c water


  1. Preheat oven to 350 degrees
  2. Shred cheese – or pulse it in a food processor until it becomes granular
  3. In large bowl, combine mozzarella, almonds, garbanzo bean flour, flax meal, onion powder, garlic powder, and salt
  4. Stir in eggs, oil, and water and mix thoroughly
  5. Spread a sheet of parchment paper over a baking sheet/pizza stone (If using a baking pan, it’s easier to use the back of the pan) 
  6. Place dough on parchment paper and lay a second sheet of parchment paper on top of dough
  7. Flatten with a rolling pin into a 14″ round
  8. Carefully remove top layer of parchment paper
  9. Use a spoon or hands to form a crust edge
  10. Bake for 20 minutes
  11. Remove from oven and top with sauce and pizza toppings
  12. Bake for an additional 10 minutes or until cheese is melted
