Chocolate Chip Chickpea Blondies

Ingredients:

1 1/2 c (1 can) chickpeas (or white beans), drained and rinsed
3/4 t baking powder
1/8 t baking soda
1/4 t pink salt
3/4 c coconut sugar
2 t vanilla extract
1/4 c golden flax meal
1/4 c peanut butter or almond butter
1/2 c Lily’s chocolate chips (or coconut oil chocolate chunks)

Directions:

  1. Grease 8×8 pan or line with parchment paper
  2. Preheat oven to 350 degrees
  3. Blend all ingredients (except chips) until very smooth in food processor
  4. Stir in chips until well mixed
  5. Scoop batter into pan
  6. Bake for 30 minutes (Will look a little undercooked when taken out of oven, but will firm up as they cool)
