Chocolate Peanut Butter Oatmeal Cookies

2 c oats
2 ripe bananas, mashed
6 mini Trader Joe’s Dark Chocolate Peanut Butter Cups, chopped (1/2 c)


  1. Preheat oven to 350 degrees
  2. Line baking sheet with parchment paper
  3. Place oats in food processor and pulse until flour-like consistency is reached
  4. Combine oats and mashed banana in bowl
  5. Stir in chopped peanut butter cups
  6. Drop by heaping tablespoon onto baking sheet into 20 mounds and flatten slightly with spatula or fork
  7. Bake 15 minutes or until golden brown on bottom
  8. Remove from oven and cool on wire rack
