Ingredients:
1 apple, divided
1/4-1/2 c water
1/2 t (or more) pumpkin pie spice
1 dropperful SweetLeaf vanilla creme stevia
1 t (or more) cinnamon
Directions:
- Add 1/4 c water to skillet over med-high heat
- Core apple and divide into quarters
- Chop 1/4 apple coarsely and set aside
- Cut remaining 3/4 apple into very thin slices
- Add apple slices, pumpkin pie spice, and vanilla stevia to skillet
- Cover and cook, stirring occasionally, until apple slices are softened
- While apple slices are cooking, combine chopped 1/4 apple with cinnamon in ziploc bag or tupperware
- Shake until chopped apples are well coated with cinnamon
- Transfer cooked apple slices to plate (leave liquid in skillet) and top with cinnamon coated apples
- Add additional water to skillet, if needed, and stir in leftover cinnamon
- Cook, uncovered, until liquid reduces to sauce consistency
- Drizzle cinnamon sauce over plated apples
