Ingredients:
4 scoops protein powder of choice (stevia sweetened)
1 c liquid egg whites
¼ c cottage cheese, whipped
¼ c unsweetened almond milk, or more if needed
2 t baking powder
1 t cinnamon
stevia, if desired
Directions:
- Preheat oven to 350 degrees
- Line muffin tin with liners
- Combine all ingredients in blender/food processor or mix stir together in bowl
- Pour into muffin tin
- Bake for 15-20 minutes or until toothpick comes out clean when inserted in center of muffin
- Remove and allow to cool (will deflate some as cooling)
