4 scoops protein powder of choice (stevia sweetened)
1 c liquid egg whites
¼ c cottage cheese, whipped 
¼ c unsweetened almond milk, or more if needed
2 t baking powder
1 t cinnamon
stevia, if desired


  1. Preheat oven to 350 degrees
  2. Line muffin tin with liners
  3. Combine all ingredients in blender/food processor or mix stir together in bowl
  4. Pour into muffin tin
  5. Bake for 15-20 minutes or until toothpick comes out clean when inserted in center of muffin
  6. Remove and allow to cool (will deflate some as cooling)
