Citrus Chicken Salad

3.5 oz cooked chicken, cut into bite sized pieces
1/2 grapefruit
8 oz romaine lettuce
1/3 c water or Swanson chicken stock
pink salt and pepper, to taste
Lemon Ginger Dressing or Simple Girl Citrus Ginger Dressing


  1. Heat water (or chicken stock) in skillet over med-high heat
  2. Add chicken and cook until cooked though
  3. Remove rind from grapefruit and chop into 1″ pieces
  4. Add to skillet, cover, reduce heat to low and simmer, stirring occasionally, for 3 minutes
  5. Toss romaine in dressing then transfer to plate/bowl
  6. Top with chicken mixture
  7. Sprinkle with pink salt and pepper
