Ingredients:
3.5 oz cooked chicken, cut into bite sized pieces
1/2 grapefruit
8 oz romaine lettuce
1/3 c water or Swanson chicken stock
pink salt and pepper, to taste
Lemon Ginger Dressing or Simple Girl Citrus Ginger Dressing
Directions:
- Heat water (or chicken stock) in skillet over med-high heat
- Add chicken and cook until cooked though
- Remove rind from grapefruit and chop into 1″ pieces
- Add to skillet, cover, reduce heat to low and simmer, stirring occasionally, for 3 minutes
- Toss romaine in dressing then transfer to plate/bowl
- Top with chicken mixture
- Sprinkle with pink salt and pepper
