Ingredients:
3 c unsweetened coconut flakes
1 c cashews, roughly chopped
½ c almonds, roughly chopped
¼ c walnuts, roughly chopped
¼ c pumpkin seeds, roughly chopped
2 T chia seeds
1 t cinnamon
5 T coconut oil, melted
Directions:
- Preheat oven to 250° and line a baking sheet with parchment paper
- Combine all ingredients in a bowl, mix thoroughly, and spread evenly on the sheet
- Bake 15-20 minutes until golden, rotating halfway through cooking time
- Remove from oven and allow to cool
