Coconut Curried Tuna Salad

Ingredients:

1 can tuna (or salmon) 
2 T coconut milk/cream (canned)
1 t apple cider vinegar
2 t curry powder
1/2 t cinnamon
pink salt and pepper, to taste
1/4 c chopped grapes, optional

Directions:

  1. Mix all ingredients together in small bowl
  2. Adjust curry powder, cinnamon, salt and pepper to taste

* Serve with apple slices, cucumber slices, carrots, celery or as a sandwich
