Coconut Flour Banana Pancakes

Ingredients:

1 banana
1 egg
1 T egg whites
1 T coconut flour
1/8 t baking soda + 1/2 t vinegar (or 1/2 t baking powder)
1/2 t vanilla, if desired

Directions:

  1. Heat skillet to med-high 
  2. Mash banana in liquid measuring cup with pour spout
  3. Add in eggs and whisk until well combined
  4. Stir in baking soda/vinegar (or baking powder) and vanilla, if desired
  5. Stir in coconut flour
  6. Lightly grease skillet
  7. Pour pancake sized amount of batter into skillet
  8. Allow to cook on one side until fluffy and bubbly in center
  9. Flip and cook on other side
