Ingredients:
1 banana
1 egg
1 T egg whites
1 T coconut flour
1/8 t baking soda + 1/2 t vinegar (or 1/2 t baking powder)
1/2 t vanilla, if desired
Directions:
- Heat skillet to med-high
- Mash banana in liquid measuring cup with pour spout
- Add in eggs and whisk until well combined
- Stir in baking soda/vinegar (or baking powder) and vanilla, if desired
- Stir in coconut flour
- Lightly grease skillet
- Pour pancake sized amount of batter into skillet
- Allow to cook on one side until fluffy and bubbly in center
- Flip and cook on other side
