Ingredients:
1/2 cup coconut oil
3/4 cup canned coconut milk, full fat
3/4 cup shredded unsweetened coconut, divided
1 tsp vanilla extract
1 tsp pumpkin pie spice
3 dropperfuls stevia
Directions:
- In double broiler, combine coconut oil, coconut milk, vanilla, pumpkin pie spice, and stevia
- Heat until melted and mixed together
- Stir in 1/4 c shredded coconut
- Place mixture in refrigerator for about 30 minutes (until moldable, but not solid)
- Spoon out mixture by heaping tablespoon at a time
- Roll into balls
- Roll ball in remaining 1/2 c shredded coconut to coat
- Place in refrigerator or freezer until hardened and for storage
