Crab Florentine Eggs Benedict

Ingredients:

1 c. frozen chopped spinach
¼ tsp. nutmeg
2 oz. canned crab meat
pink salt, to taste
2 eggs
1 batch 90 Second Coconut Bread
2 servings Coconut Oil Hollandaise

Directions:

  1. Prepare 90 Second Coconut Bread and place on 2 plates.
  2. Poach both eggs in saucepan.
  3. In skillet, heat spinach, crab, nutmeg, and salt then plate on top of bread slices.
  4. Place egg on top of spinach.
  5. Drizzle Coconut Oil Hollandaise over egg.
