Creamy Roasted Red Pepper Zoodles

2 roasted red peppers
1 T olive oil
2 oz chevre goat cheese
1 t pink salt
4 servings Zoodles (Zucchini Noodles)
2 T coconut oil



  1. Place all ingredients in blender or food processor and blend until smooth
  2. Heat coconut oil in skillet over med-high heat and cook Zoodles until tender
  3. Stir sauce into Zoodles (Zucchini Noodles)
