Creamy Zucchini Zoodle Soup

8 oz zucchini
1 c water
1/8 t celery seed
1/2 t onion powder
1/4 t garlic powder
1 T dijon mustard
1/4 t xanthan gum
1/4 t smoked paprika
pink salt and pepper, to taste


  1. Cut zucchini into thin strips or spiralize
  2. Steam zucchini until softened
  3. Set aside 2 oz of zucchini and place the other 6 oz in blender
  4. Add water, celery seed, onion powder, garlic powder, dijon mustard, and smoked paprika
  5. Blend until well incorporated and zucchini is liquified
  6. Add xanthan gum and blend again
  7. Stir in remaining 2 oz zucchini and season with pink salt and pepper
    (Can also be used as a sauce, if desired)
