Ingredients:
8 oz zucchini
1 c water
1/8 t celery seed
1/2 t onion powder
1/4 t garlic powder
1 T dijon mustard
1/4 t xanthan gum
1/4 t smoked paprika
pink salt and pepper, to taste
Directions:
- Cut zucchini into thin strips or spiralize
- Steam zucchini until softened
- Set aside 2 oz of zucchini and place the other 6 oz in blender
- Add water, celery seed, onion powder, garlic powder, dijon mustard, and smoked paprika
- Blend until well incorporated and zucchini is liquified
- Add xanthan gum and blend again
- Stir in remaining 2 oz zucchini and season with pink salt and pepper
(Can also be used as a sauce, if desired)
