Ingredients:
Salad:
1 cucumber, peeled and cubed
1/2 pint cherry tomatoes, halved
1 bell pepper (any color), sliced
1/8 c. red onion, sliced thin
20 large kalamata olives, pitted
2 oz. crumbled feta cheese
Dressing:
Juice from 2 lemons
1 garlic clove, minced
1/2 tsp. parsley
2 T. olive oil
Pepper and pink salt, to taste
Directions:
- Pulse garlic, parsley, lemon juice, olive oil, pink salt, and pepper in blender cup.
- Combine all veggies in bowl.
- Toss veggies with dressing.
- Stir in feta.
