Ingredients

8 oz enoki mushrooms
8 oz shrimp
1 red bell pepper, sliced thin
4 oz mushrooms, sliced thin
1 T butter
juice of 1/2 lemon
1-2 cloves minced garlic
1 t Ranch Seasoning
parsley, as garnish
 

Directions
  1. Melt butter in saucepan
  2. Stir in garlic and lemon juice and cook, stirring, a few minutes
  3. Add red pepper, mushrooms, ranch seasoning, and shrimp then cover and cook, stirring occasionally, until shrimp is cooked and veggies are softened
  4. Boil water in separate saucepan
  5. Add enoki mushrooms and boil about 5 minutes
  6. Drain then stir enoki mushrooms to shrimp mixture
  7. Garnish with parsley
