Ingredients:
8 oz enoki mushrooms
8 oz shrimp
1 red bell pepper, sliced thin
4 oz mushrooms, sliced thin
1 T butter
juice of 1/2 lemon
1-2 cloves minced garlic
1 t Ranch Seasoning
parsley, as garnish
Directions:
- Melt butter in saucepan
- Stir in garlic and lemon juice and cook, stirring, a few minutes
- Add red pepper, mushrooms, ranch seasoning, and shrimp then cover and cook, stirring occasionally, until shrimp is cooked and veggies are softened
- Boil water in separate saucepan
- Add enoki mushrooms and boil about 5 minutes
- Drain then stir enoki mushrooms to shrimp mixture
- Garnish with parsley
