Ingredients:
7 oz chicken breast
1/2 c balsamic vinegar (Pompeian or other brand w/o sugar or grape must)
1 (14.5 oz) can Muir Glen fire roasted tomatoes
pink salt and pepper, to taste
1/2 t garlic powder
1 t Italian seasoning
Directions:
- Heat 1/4 cup balsamic vinegar in skillet
- Add chicken
- Cook 1 minute on each side, coating chicken in vinegar
- Cover chicken with can of tomatoes and stir in remaining vinegar
- Add spices
- Cover and simmer for about 10 minutes or when sauce is desired consistency
