Fire Roasted Tomato Balsamic Chicken

7 oz chicken breast
1/2 c balsamic vinegar (Pompeian or other brand w/o sugar or grape must)
1 (14.5 oz) can Muir Glen fire roasted tomatoes
pink salt and pepper, to taste
1/2 t garlic powder
1 t Italian seasoning


  1. Heat 1/4 cup balsamic vinegar in skillet
  2. Add chicken
  3. Cook 1 minute on each side, coating chicken in vinegar
  4. Cover chicken with can of tomatoes and stir in remaining vinegar
  5. Add spices
  6. Cover and simmer for about 10 minutes or when sauce is desired consistency
