Fudgy Chocolate Protein Bars

Calories Per Serving: 165 (or 180 w/ maple syrup)

1/2 c oats
1 (15 oz) can black beans, drained and rinsed
1/8 t pink salt
1/2 c whey protein powder (or other protein powder of choice)
3 T unsweetened cocoa powder
1/3 c IMO prebiotic fiber (or maple syrup)
30 drops stevia
3 1/2 T coconut oil, melted
1 T vanilla extract
1/2 t baking powder
1/3 c add-ins* (chocolate chips, raisins, nuts, etc), optional


  1. Preheat oven to 350 degrees
  2. Line 8×8 inch pan with foil and grease lightly
  3. Place oats in food processor and pulse until flour consistency is reached
  4. Add all remaining ingredients to food processor (except for optional add-ins) and process until smooth
  5. Stir in add-ins*, if desired (*Will need to calculate in additional calories)
  6. Bake for 20 minutes (Will look slightly underdone when taken out of oven)
  7. Let cool a few minutes then press down with pancake spatula to make more compact
  8. Refrigerate overnight
  9. Cut into 8 bars
  10. Store leftovers in refrigerator
